What is Soto Ayam?

Soto Ayam is one of Indonesia's most popular soups – a clear, golden-yellow chicken broth that gets its characteristic color from turmeric and is flavored with lemongrass, ginger, galangal, and other spices. It is served with rice noodles, shredded chicken, eggs, and Kerupuk.

Ingredients for 4 servings

  • 1 whole chicken or 4 chicken thighs
  • 2 stalks lemongrass
  • 3 cm ginger
  • 2 cm galangal
  • 1 tsp turmeric
  • 4 kaffir lime leaves
  • Salt and pepper
  • Rice noodles for serving
  • Hard-boiled eggs, Kerupuk, spring onions for garnish

Preparation

Step 1: Bring the chicken to a boil in water with lemongrass, ginger, galangal, turmeric, and lime leaves. Simmer for 45 minutes.

Step 2: Remove the chicken, debone the meat and shred it. Strain the broth.

Step 3: Cook rice noodles according to package instructions.

Step 4: Place noodles in deep bowls, add chicken broth, and garnish with meat, egg, spring onions, and Kerupuk.
