What is Rendang?
Rendang is a traditional dish from West Sumatra and is considered one of the most flavorful dishes in the world. Beef is simmered for hours in coconut milk with a spice paste made from chili, ginger, galangal, lemongrass, and turmeric until the liquid has completely evaporated and the meat has absorbed the spices.
Ingredients for 4 servings
- 800 g beef (shank or shoulder), cubed
- 400 ml coconut milk
- 1 Rendang spice paste (or make your own)
- 2 stalks lemongrass
- 4 kaffir lime leaves
- 1 tsp turmeric
- Salt to taste
Preparation
Step 1: Sauté the Rendang spice paste in a little oil until fragrant.
Step 2: Add the beef and brown on all sides.
Step 3: Add coconut milk, lemongrass, and kaffir lime leaves. Simmer over medium heat for 2–3 hours.
Step 4: Continue stirring until the liquid has evaporated and the meat is lightly browned. This requires patience – but it's worth it.
